Frequently Asked Questions

  • Are weight conversions accurate for any ingredient?

    Pure weight units (g ↔ oz ↔ lb) are exact. Volume → weight depends on the ingredient — flour, sugar, and water all have different densities. For baking, prefer grams from a kitchen scale.

  • How is gas mark mapped to °F / °C?

    Gas mark 1 = 275°F / 135°C, mark 4 = 350°F / 177°C, mark 9 = 475°F / 246°C. Values between marks are linearly interpolated.

  • Why are cups 236 mL, not 250 mL?

    We use the US legal cup of 236.59 mL. The metric cup (250 mL) is used in Australia / NZ; convert via 1 metric cup = 250 mL if your recipe specifies it.
